Why Organic Matters for Leaves

Citrus leaves absorb far more from foliar sprays than the thick-skinned fruit ever does. In a conventional grove, the leaves are not food. In our grove, they are.

Steep 4–6 torn leaves in boiling water for 5–7 minutes. Add honey. A calming, citrus-forward evening drink.

Warm honey with bruised leaves on low heat for 20 minutes. Strain and jar. Keeps 3 months.

Simmer with equal parts water and sugar for 15 minutes. Use in gin spritzes, sparkling water, lemonade.

Dry leaves completely, then toss on hot coals before grilling fish, chicken, or pork. Subtle citrus smoke.

Steep leaves in warm cream before making panna cotta, custard, or ice cream base.

Lay fresh leaves under plated food. Tuck into cocktail glasses. Use as a fragrant presentation layer.
